Pickled Celery

Ingredients:

  • 4 stalks celery

  • 1 Tbsp salt

  • 3 cups pickling brine

Pickling Brine:

  • 1 cup water

  • 1 cup sugar

  • 2 cups cider vinegar

  • 1 bay leaf

  • 2 whole cloves

  • 1 tsp coriander seeds

  • ½ tsp allspice berries

Procedure:

  1. Slice celery and add to 2 mason jars.

  2. Add all other ingredients to a saucepan, bring to a boil, and remove from heat.

  3. Pour liquid over the celery in the mason jars.

  4. Seal lids and refrigerate.

  5. Best after 3 days; use within 1 month.
