Pickled Carrots

Ingredients (Brine):

3 cups water
-
1¼ cups apple cider vinegar

1 Tbsp coriander seeds
-
1 Tbsp mustard seeds
-
1 tsp black peppercorns
-
2 bay leaves
-
3 Tbsp sugar
-
2 Tbsp salt
Procedure:

Slice carrots and add to 2 mason jars.

Add all other ingredients to a saucepan, bring to a boil, and remove from heat.

Pour liquid over the carrots in the mason jars.
-
Seal lids and refrigerate.
-
Best after 3 days; use within 1 month.
