Pickled Carrots

Ingredients (Brine):

  • 3 cups water

  • 1¼ cups apple cider vinegar

  • 1 Tbsp coriander seeds

  • 1 Tbsp mustard seeds

  • 1 tsp black peppercorns

  • 2 bay leaves

  • 3 Tbsp sugar

  • 2 Tbsp salt

Procedure:

  1. Slice carrots and add to 2 mason jars.

  2. Add all other ingredients to a saucepan, bring to a boil, and remove from heat.

  3. Pour liquid over the carrots in the mason jars.

  4. Seal lids and refrigerate.

  5. Best after 3 days; use within 1 month.
