Coconut Sponge Cake

Ingredients:

  • 320 g coconut milk

  • 4 egg whites

  • 200 g powdered sugar

  • 60 g all-purpose flour

  • 40 g coconut flour

  • 6 g baking powder

  • 20 g butter

 

Procedure:

  1. Blend in Vitamix until smooth.

  2. Strain into ISI canister.

  3. Add 2-3 CO₂ cartridges.

  4. Poke 5 small holes in bottom of Dixie cups with a knife, then fill cups ¾ of the way full.

  5. Microwave for 30 seconds.

  6. Place upside down and let cool, then remove from Dixie cup with an offset spatula.
