Coconut Sponge Cake

Ingredients:

320 g coconut milk

4 egg whites
-
200 g powdered sugar
-
60 g all-purpose flour
-
40 g coconut flour
-
6 g baking powder
-
20 g butter
Procedure:

Blend in Vitamix until smooth.

Strain into ISI canister.

Add 2-3 CO₂ cartridges.

Poke 5 small holes in bottom of Dixie cups with a knife, then fill cups ¾ of the way full.

Microwave for 30 seconds.
-
Place upside down and let cool, then remove from Dixie cup with an offset spatula.
